Cocoa Butter

Cocoa has been used for many years, dating back to the Aztecs! Cocoa butter comes from the seeds of the cacao tree in tropical America (also named ‘the food of the gods’). To make the butter, the seeds are fermented, cleaned, roasted and cracked to form cocoa nibs. These nibs are ground to a thick oily paste called chocolate liquor which, when the fat is removed using high pressure, becomes cocoa butter. Unlike most fats or butters, cocoa butter is solid at room temperature.
